Food handling operatives working in catering, manufacturing and retail environments, who require a more indepth knowledge of food safety than offered in food hygiene level 1

Course Contents

MOHS delivers its food hygiene courses through its accreditation with Highfield Awarding Body for Compliance (HABC).

Highfield - Training and Training Materials

Content:

  • introduction to food safety and hazards

  • microbiological hazards (multiplication and survival) and controls

  • contamination hazards and controls

  • personal hygiene

  • cleaning and disinfecting equipment and  premises

  • food safety and HACCP

  • paper based exam
